One of the most important things I learned from the GamedevTV course, 'Low Poly Characters: Blender Bitesize Course', is the use of references for beginners and how complicated it can get to create characters from sheer imagination. In many ways, modeling is very similar to drawing.
The anime girl was particular difficult to create, the skirt was a huge challenge because of the normals and the rig, since I was using a mirror modifier, or at least that's my theory, I wasn't able to properly set the weights of the bones for the skirt, that's why her running animation (if you can call it that) it's so simplistic compared to the other 3 characters.
As for the course, this is just a small showcase of the abilities you'll acquire after finishing it, you'll be able to create any sort of humanoid character with relative ease if you actually put the effort. You'll also end up with two base models to edit and create your own characters instead of having to model them right from the start each time.
The course is definitely good, I highly recommend it to anyone new to Blender, just keep in mind, the course is quite short, so it doesn't dig into animation, rigging, or any other fancy stuff, it'll only teach you about very basic rigging using rigify, posing, and of course, the good old mixamo.
